  1. NO KNEAD OVERNIGHT ARTISAN BREAD - Cait

Beginner to bread? Make this overnight loaf and be blown away by your carb-tastic talent! Kneading and shaping can be a struggle for your first time, so this recipe is great for removing that all together.

If you’re like me, salad may not be on the top of your list unless it’s coated in cheese and bacon. This salad is vegan. gluten free, high in protein and fiber and tastes amazing!! The trick here is the nuts and nutritional yeast added to the dressing. It gives that creamy, cheesy taste without animal products. Be liberal with the dressing, this is not one to skimp on, and cut it small enough to be scooped up in some home made pita chips. Speaking of pita….

3. NIGELLA’S LEMON CHICKEN - Cait

A lot of the food we made over the month needed to make multiple meals or be easy to turn into leftovers. This lemon chicken is amazing all on its own, and it’s great if you’re having a family meal that you need everyone to like. It’s also great because this simple herbs mean you can turn this into shredded chicken for soups, salads, snacks, whatever works for you. Cait made two chickens together with this recipe, one to eat that day, the other to shred for lunches. Freeze individual bags of shredded chicken as cooked, it only lasts in the fridge a few days.

4. PITA BREAD - Jude vs Cait

Pita bread is a great, easy and forgiving bread. It also has the great “pop up” factor that lets you know when you’ve had success! Plus, it’s super versatile from dipping in homemade tzatziki to crisping up with some salt and olive oil to make pita chips.

Tip: When making bread, try to focus less on the timing and more on the doubling/feel of the dough. Jude’s pita was an estimated 2-hour recipe but took 4 hours to complete due to a cold kitchen (thanks winter).

If you are like Cait and myself, bacon is a huge joy in life. Sadly, it’s pretty difficult to make from scratch. Cait found this amazing recipe that was a huge hit. Make this fast panchetta without the stink of regular curing, and put it on anything from salad, soups and pastas

6. GARLIC SOUP - Cait

Niche friends of the pods know we are garlic girls and gays! Returning for another round after it’s debut in our soup episode, Cait made this soup paired with homemade pancetta and croutons made of no knead bread.

This recipe comes from Kenji Lopez’s “Food Lab” recipe book, which if you don’t have already, we would strongly recommend. This recipe can take as little as 30 minutes to whip up or as long as 4 hours if you really want to get into it. I actually completely ignore the recommended herbs to add fennel, mustard seeds and chili flakes only. It’s perfect for pasta or to make a quick and dirty shakshuka. Make it spicy, and feed 4 people in one sitting or save the sauce in your fridge for easy meals.

If you are like me and have a GIANT sweet tooth, but are not great at pacing yourself, this recipe is perfect. It’s kept in the freezer so it’s always ready to go, and it has all that cookie dough taste without any of the issues of eating raw flour or eggs. I made this every single week this month, and it was a great way to end a meal, have a snack or whatever. I added more banana that recommended in the recipe and loved the taste. I didn’t add any cherries because I don’t like them in general, but if you do, 100% recommend adding them in. The flower is replaced with cashews and coconut flour (aka blitzed coconut flakes) so this is also a very filling dessert.

9. OVEVRNIGHT OATS - Jude

One of the biggest things for success is having food you like that you can prep ahead of time. This recipe can be prepped a week ahead of time, is as easy as turning a container over into a bowl and adding your toppings and is filling with Omega-3s from the chia seeds, and plenty of other options. A month and a half from when I first tried this recipe, I still have it for most breakfasts.

Tip: I find the 1/2 cup in the recipe too much for one serving, so I recommend reducing it down to 1/3 cup. Also, my favourite flavour was chocolate turtles, but in the summer I expect to be more fruit forward.

10. CINNAMON MAPLE CARAMEL POPCORN - Cait

A perfect transition into our movie month of February, this sweet and salty snack is great for when you’d like a little crunch.

Tip: To avoid any burning, make sure to rotate the pot every 3 minutes
